Proceed to Manual Keypad Programming.
There you will find Programming Examples and Flowcharts along with an extensive FAQ section.
Using CHIRP, switching from Channel mode to Frequency mode is not necessary.
CHIRP is much quicker and easier if you are not ‘In the Field’.

I’m new so cannot answer the first question. To start scanning just press the scan key in the lower left corner of the keypad (on the UV-82L, anyway)
