Simon,
I originally started with the mini remix specifically because I wanted to keep the file size small (actually, Ubuntu wasn't my first choice, but with its simplicity, I settled on it). I was limited on time and wasn't able to get the mini distro built to my liking so I moved to the full release version of Xubuntu and removed a bunch of stuff. The setup I'm using is a full install of Xubuntu on a dedicated computer then I use Remastersys to create the liveCD. My intent was to make it as user friendly as possible so the average Windows user would have no problem with it.
Eventually, I'll play around with the mini remix again and add more features, but for the time being, I run a couple of scripts and Chirp is updated and the CD is remastered.
If you would please, send me the link to your remix and I'll play around with it. If you hit what I was trying to do, I may send a couple questions your way.

Hi Bob,
It's cool that you are doing this remix, but judging from the download
size you are working from the normal Xubuntu LiveCD (the website doesn't
say).
Are you aware of this project?

It's a starting point for live CD, and this nice thing about it is that
it's only ~200MByte (albeit without GUI).
With XCFE included this bumps to around 425MBytes (I can send you a link
for an old remix I did for our LUG a few years ago if you like).
No complaint about your work, I just thought you might be interested.
