So, I'm able to download and upload on MacOS to my FT-7800. I'm using a
regular Prolific USB-serial adapter with the OSX-PL2303 driver.

I'm not sure what to say, but it seems at this point like it now must be
some interaction between your cable and the driver. Have you tried the
official Prolific drivers?
